Whole-wheat pitas freeze very well, as do whole-wheat tortillas – both can be thawed as needed.  That said, they can be a bit stiff to make sandwiches with, but make a great pizza-type meal (put the pita/tortilla on foil over grill/campfire, add cheese, tomato, tomato sauce, other veggie toppings as desired – also great for tuna melts).  Less-than-fresh whole wheat pitas/tortillas are also great to crisp over heat (grill, campfire) and serve with a dip (salsa, hummus).

We do more of big breakfast while camping.  Usually at home it is cereal or something quick, but while camping, there is always time to make the potatoes, bacon and french toast.
