Are there places to camp other than organized campgrounds or would I need to own my own land?  I'm looking to get off the beatin path a little and enjoy more of the outdoors.

I know it's a long way from you, but out here in Arizona you can pretty much drive until you find a nice spot and then set up camp.  You can be as isolated as you are willing to drive...  We have mountains for summer camping and deserts for winter...

Look for BLM lands.  There's lots of openness in them.

If you have a decent tow veh, try Crab Tree Falls.  It's in the George Washington Nat Forrest, near Montebello.  All primitive, but there is a couple of pitt toilets at the meadow parking lot, top of the falls.
