Rather than a lot of ice, we bring our Coleman thermoelectric cooler. In the TV plugged into the outlet, we have cold drinks and sandwiches ready for a long drive with a quick lunch and no melting ice cubes. On site, it becomes another refrigerator and the camper freezer makes ice cubes quickly for our needs. If we anticipate more ice needed, we bag the first trays (we use 2 mini trays) of ice and then make more. Of course, it's only the two of us and ice is only for making frosty type beverages with our Magic Bullet.
We owned a portable ice maker for the last four years. It stopped working at the Promise Land Rally.
I need to tear it apart and try and fix it.
Pros - makes ice cubes very quickly, usually can make 3 different sizes. Can make up to 15 lbs a day. Never need to leave campground for ice.
Cons - Very heavy, needs 120 volts to operate, needs to be cleaned and sanitized on occasion. The storage chamber is not refrigerated

A good cooler with blocks of ice made from milk cartons works well. Then top off with bags of ice.
We have a big ice maker at work so the day before we leave I swing by work (if I'm not already working that day) and fill 2 big coolers with ice.
1 has precooled drinks and I fill it with ice.
The other is just spare ice and or ice to put in mixed drinks.
This lasts up to 5 days in the Florida summer.
If I do not get to work to get ice, I pre-freeze 1 gallon jugs of water and put those on the bottom of the cooler and top with cubes from the house.
Our freezer in the camper also makes ice if we need it.
