I have been cooking in DOs For several years. It brings a whole new dimension to camping food. I cook everything from breakfast casseroles to roasted chicken. The possibilities are only limited by ones willingness to try. DO cooking can be intimidating at first but very doable. If you are looking to begin DO cooking and you don't know which DO would be the best one to start with, I would reccommend the Lodge 12" Deep. With this DO you can cook most anything.
I posted this picture in another thread, but thought that I would post here too. So far, DO cooking has been pretty easy. Here is one of my favorite meals...Venison Lasagna.

IMO the hardest part to DO cooking is heat AND time management.
when you first start out, your urge to constantly want to open the lid is insatiable...
most recipes will give you a great amount of detail.
from when to rotate the lid/base, when to add things, right down to how many coals to have on standby for maintaining heat.
just like in a home kitchen, you have to read directions, and after awhile it is just second nature.
