Thirty years ago my husband and I bought an old used Coleman Tent Trailer. It was fantastic! As out kids outgrew it, we only considered Coleman's as a replacement. About five years ago we traded in the last of our Pop-Ups for a full size 33 ft. long "grown up" trailer. We've taken a few nice trips with it but find ourselves missing the ability to camp practically anywhere. So, the kids are grown and we're thinking of going back to a simpler way to camp.
Any suggestions?

As you may know, Fleetwood was the manufacturer behind Coleman and they parted ways a few years before Fleetwood closed their doors. I bought a used Fleetwood and would buy another in a heartbeat. My understanding is that Somerset bought quite a number of the Fleetwood layouts and some parts may be interchangeable. They also hired a boatload of former Fleetwood employees, so you may be able to get a Fleetwood quality popup from Somerset. Those would be my two choices in order of my preference if I was shopping.

I'm rather biased, but I think Apache Solid State's (1970-) are the way to go. You've got the security of a TT and ease of use of a conventional pop up.
I own a 78 Apache Roamer. OEM had a shower, toilet, kitchenette, both bunk ends and dining table drops to create a bed. Different models had different floor plans. 1850lbs was the max curb weight.
Where are you in Idaho? We're not terribly far from Coeur d'Alene.
