Beer-brined pork and onion skewers

This recipe is from a cookbook that I use often.

Marinating pork in beer, sugar and salt makes it exceptionally tender and flavorful.

1 1/2 cups water
1 bottle beer
1/2 cup packed brown sugar
1 tablespoon crumbled dried oregano
2 cloves garlic, minced
1/4 cup salt
1 teaspoon pepper
1 1/2 pounds pork loin or pork butt, cut in 2 inch chunks
2 medium onions, cut in 2 inch chunks

mix the water, beer, sugar, oregano, garlic, salt and pepper in a large ziplock bag until well combined. add the pork chunks to the bag and shake to combine. seal the bag, and marinate in a cooler for at least 4 hours and up to 48 hours.

remove the pork from the marinade, and discard the liquid.  thread the pork, chunks and onion chunks alternately onto skewers. grill the skewers over medium-high heat, turning regularly, 15 to 20 minutes, until pork is cooked through.  let stand 5 minutes before serving.

Mmm, sounds good! Might add some peppers and mushrooms when skewering.

Hmmm, pork is on the menu this week.  I'll have to try this.

Dave, what kind of beer are you using in there?  Ale, lager?  Light, dark?
