We have been looking at camping propane ovens.  CampChef has 2 different available and the reviews say that they heat evenly and stay at temp.  Both ovens are the same but one has a stove on top and the other a grill. There are much cheaper prices at Cosco and other places.

We are also looking for an over to bake stuff camping. My problem with these is the weight (35 +-). There is no floor space I can put it on.

Dave,

Not all of them :D... We don't have one in our HTT, but then we realized we on used the oven in the Avalon 3 or 4 times in  3 years. It was a bread box most of the time and we realized the space was just more useful as a cabinet.

My Niagara has the oven as part of the range, and I've used it several times with excellent results (cookies/biscuits).  I used the 'toaster oven' size pans/cookware in it and they fit well.

Back in my tenting days I had the Coleman folding oven that you sit on the stove burner.  It did well with biscuits, if you lined the bottom of the cookie sheet with foil - without, the bottoms of the biscuits were rather charred and the tops might be perfect.

We have a portable electric oven we really like, and started taking it camping with us - and love it.  It's easier to clean than the PUP's oven.
