I'm interested in learning how to do canning as a method of preserving food. I've heard that the food contents are processed and sealed in an airtight container with a typical shelf life ranging from one to five years, although under specific circumstances a freeze-dried canned product, such as canned, dried lentils, can last as long as 30 years in an edible state.
Does anyone else do canning?
I've been canning for more years than I care to count. Over the past few years, I don't "put up" as many cans as I did in the past, but I still managed to can 35 qts of homemade applesauce. I'm hoping this year to have enough tomatoes in the garden to do those as well.
Canning is not all that difficult, you need a few basic tools, and have to be careful about sterilizing the jars, lids, bands and jar lip. I'd recommend Ball Blue Book as a great way to get started. My grandmother gave me my copy when I was about 16 and started canning with her. This book will give you all the "how to" techniques as well as recipes for different things, such as pickles, applesauce, etc.
A comment on how long things last...I've had canned tomatoes last up to 5 years.
