Yummm!!! DW and I have made this 3 times at home since we discovered it this fall. It is very tasty and, according to my wife, a lot healthier than what I typically eat. It is simple and easy. Heck, anything in the crock pot is easy. It is ohhh so tasty. I have it for lunch at work today and I am looking forward to it :chef: I think we will add this to our camping menu.
2 pounds of Chicken. We used breasts
2 cans of diced tomatoes
1 can of corn
1 can of beans.
Mix the seasoning packet with the tomatoes, corn, and beans. Put over the chicken in the crock pot and cook 8 hours on low, 4 hours on high. Shred the chicken and serve over rice.
