It's always nice to hear when something works out well. Really glad you liked it, Eagle. Andouille is a traditional sausage in jambalaya. It is available in more places now than ever, but some areas you have to shop around.

Tasso would be a grand addition to the meats.

Steve, I tried one of your jambalaya recipes also.
I turned out awesome! I used to just use a box mix until DW started having MSG reactions. The home made recipe was much better then the box.

Glad you liked it, Nim.

If DW's having MSG issues have her watch her mushroom intake. For that matter, anything else associated with umami.

Steve,
The only mushrooms I use are "fresh" from the local grocer. DW uses the jarred type in her morning eggs. I'll start checking those, thanks for the tip.
Is there MSG in the fresh ones too?
What the heck are umami?

After I started looking at the labels I was surprised what had MSG. It changed our menu for sure.
After my surgery I ended up very lactose intolerant. Between the two of us it can be a challenge to go out for dinner.

Nim,

Umami is the fifth taste beyond sweet, sour, salty and bitter. Umami is the Japanese word for 'savory'. It tends to occur in foods naturally high in MSG. Mushrooms come to mind because they fit the bill.

Thanks Steve,
Didn't know there was a filth taste. I will diffidently keep that in mind, DW suffers with the MSG.
Of coarse beer doesn't fit in the first four either.
