Spice up the meat to your mexican flavor tolerance, add meat and cheese and enchilada sauce to wrap, roll it up, place in pan or dutch oven. More cheese and sauce over the top. Bake. Serve over mexican rice or corn bread.

Somebody always wants it for lunch the next day.  Put it in tupperware and frig or cooler.
