This is NOT meant to offend anybody but find out what kind of recipes I might offer.
And by the way, for the record, baaaa! with quack coming in a close second. However, for day-to-day usage, oink is on the top of my list.
I love lamb and duck. But in most places I find it hard to obtain. When I do get lamb I'm after leg o'. I'll roast it simply with garlic, kosher salt, cracked black pepper and rosemary.
As for duck, seared breasts. YUM!
However, my day-to-day critter is pork. From the nose to the toes, inside and out, I love pork. My favorite??? Pork tamales with a subtle green sauce and crumbled Oaxacan cheese... or shoulder steaks... or Boston butt or picnic. I like the fatty parts with the flavor.
I used to do Turducken's at campsites over the firering. The last one I did was at Myrtle Beach SP Thanksgiving 2010. Tasty stuff! (I did cheat, I bought mine prepped.)
Kev, I love ribeye steaks and have been eating more NY Strips of late. Yes, well grilled, yum. But overall, gimme lambda, lambda, lambda. As Phil said, leg o'lamb, yesPLEASE! On my last ship my division and another would do a buffet day. I would always prepare leg of lamb because nobody else would ever do it at home.
I chose the Shellfish category - my favorite animal recipes are simple: 'peel & eat' shrimp (purchased raw and cooked with Old Bay (or similar seasoning)) and served with lemon and Kelchner's cocktail sauce (it's extremely heavy on the horseradish without being too salty, sugary, or runny) as well as 'crack & eat' crab (blue, rock, dungeness, snow, any type) served with Old Bay and lemon on the side (no offense to anyone, but I just don't understand why you'd need drawn butter with something that's so rich already). However, I don't like the texture of bivalve shellfish (clams and oysters).
Hard choice, though - I love pork, turkey, and fish as well.
