Serves 4
1 can whole kernel corn, drained
4 medium scallions, white parts, chopped
4 medium plum tomatoes, chopped
1 small green bell pepper, seeded and chopped
2 tsp roasted pimientos, chopped
2 to 3 teaspoons Creole or Cajun seasoning
1 tablespoon butter
Fold heavy duty aluminum foil to make a double thickness 12 inches square. Spray with non-stick cooking spray.
Combine the first 5 ingredients in a bowl, and stir to mix. Add seasoning and stir to mix thoroughly.
Form the foil into a bowl shape and carefully spoon half the mixture into the foil. Place the butter on top. Add the rest of the mixture.
Seal the foil tightly.
Cook on the grill over medium heat for 15 minutes, turning every 5 minutes.
Serve from the foil, or place in a bowl.
