We always have left overs from our *holiday* family meals. enough for at least 2 full meals.

for turkey I will usually take the dark meat and make a turkey pie, stew, or soup with it. (make just like chicken soup or beef stew)

with ham, I will slice it thick and use it for a pan fried ham steak (breakfast), or dice it up and use it in a chef salad

this year, I took the left over light meat, and made about 40 finger sandwiches our of it.  and it was pretty good too.

Ingredients:
4 cups chopped turkey
1 cup mayo or miracle whip
2 celery stalks finely chopped
1/2 onion finely chopped
1 teaspoon salt
1 teaspoon pepper
1 tbsp extra virgin olive oil
juice from 1/2 lemon (2 teaspoons lemon juice)

optional: chopped bacon, shredded cheese, substitute salt for seasoned salt.

Directions:
put all the ingredients in a mixing bowl, stir it all up.
or
place in food processor and blend for preferred texture.
for extra smooth add 1/2 cup sour cream

each batch yields 10-15 finger rolls.

you can also use it as a CRACKER dip, garden salad topper, or just put on your favorite bread !

Just heat and eat.  Although I have heard of Turkey soup and have wanted to try it.

My mom was over last week and we were talking about the turkey.....the 12 # turkey for 8 people.  I told my wife that my mom is having a heart attack because she would have gotten an 18-20 # bird for the same number of people.  By having a smaller bird we don't have as much leftover.

In my mind, nothing beats a good turkey sandwhich with mayo, mustard, a slice of swiss, lettuce and tomato. Great now i'm hungry  😛

we soaked the thick slices of breast meat for 2 hours today in teryaki marinade and grilled them.

We usually enjoy turkey sandwiches on rye with mayo. Some of the family put lettuce on theirs, but I like mine with mayo and cranberry sauce! We were at a DD's house for T-Day and tehre were hardly any leftovers anyway. I'm temped to go out and get a turkey for us for the weekend jut for the leftovers!

I make turkey soup with the pickings off the frame (my DD threw it out!) but my DH does not like turkey soup until he tastes it - every time. It's a mental thing. We have a few of these mental things at Thanksgiving. I'm from an English background and he's from a Sicilian. At least we have stopped having to have lasagne as an appetizer BEFORE we eat dinner!  :chief:

another thing you can do is Turkey Wraps.

we are thinking of Fajitas for tomorrow.  instead of chicken... TURKEY !

we had 2 20+ lb birds AND a 15 lb ham for 14 people. plus all the trimmings and then some ! 6 slices from each side and the 8 wings/legs is all that gets served.
nobody wants to clean all the meat off, so I do, and reap the rewards....hehe

just thought of another lunch snack....shred the turkey, throw in crock pot with favorite BBQ sauce, add spices, 1 hour later... put on hamburger buns and eat !

Judy, my mom is Sicillian as well.  We have Manicotti with each Thanksgiving....and it is a course before the Turkey as well  :chef:

We take some left over turkey, ham and pickles run it thru the grinder to make sandwich spread.

today is dark meat turkey with minestrone soup, simmering it for 2 hours then serve !

Turkey Pie
Cut up leftover meat into chunks. Put in bottom of baking dish, layer green beans and corn and top with mashed, bake until bubbling and potatoes are getting browned. 8)

Great recipes here.  We used to have the Manicotti before turkey too, but the family agreed to save it for the next holiday. We did 3 turkeys and had sandwiches the next day. we froze the rest and now I know what to do with rest.  🙂
