1 large avocado
1/2 t salt
1 minced chipotle chile
2 green onions (sliced thin)
1/2 lime (juice)
8 slices multigrain bread
olive oil spray or noncook spray
8 oz monterey jack or sharp cheese (sliced thin)
mash the avocado in a bowl with salt, green onion, and lime juice.
Grill Method:
spray one side of each slice of bread with olive oil. place 4 slices on your work surface, oiled-side down, and spread each 1/4 of the avacado mixture. distribute teh cheese evenly among the four slices. place the remaining 4 slices of bread on top, oiled-side up.
Grill over high heat, until underside are golden brown and cheese starts to melt. carefully flip. cook second side the same, remove from grill, slice in half, serve immediately or wrap in foil.
