I made a spaghetti sauce recipe that called for white wine. It came out really good, and the wine added a great flavor. However,
after a long simmer on the stove, the sauce lost most of the flavor the wine added earlier on. Should I have waited until the last minute to add ? Also, I always heard only cook with wine that you would also drink. I am not a wine drinker and do not know the good from the bad. Would you also recommend a red and a white wine that is widely available that is good to cook with?

Cooking with Alcohol just makes everything taste better....You can even add it to your recipe :cheers:
When I was a kid in Scouts we found this recipe for a stew that we were going to make while camping. The leader said fine, but we couldn't use the wine the recipe called for :ranger: We go camping and since the recipe called for a 1/2 bottle of wine, and you HAVE to follow the recipe, someone got their hands on a bottle of wine ::) We started to cook the stew Saturday afternoon and since the leader might notice the wine in the dinner we only put a 1/4 of the bottle into the stew. Now, what to do with the other 3/4 of the bottle :whistle:
