Homemade salsa

this is the way I make, and like salsa from scratch.
4 decent sized tomatoes ( beefy's are the best flavor IMO)
1 large white onion
2 tbsp fresh garlic=1-2 cloves ( jarred stuff is not good for salsa)
1 tsp black pepper
1 lime (substitute with cilantro)
(optional: 1 small green/red bell pepper)

slice tomatoes in half, trim ends, then quarter
peel, slice onion, cut into halves
break and mince garlic
dice peppers
cut lime in half

on med heat lightly roast peppers, onions, AND garlic together (do not use butter) use 1 tbsp olive oil optional, until they are lightly roasted, stir often.
you do not want them cooked to soft/browned !
drain and set aside.

using a food processor, add ALL ingredients, squeeze 1/2 of the lime only.  run until you have your desired CHUNKY/SMOOTH consistency.  if needed, squeeze other half lime in, STIR, and serve !

This is more of a pico de gallo, it is not cooked.

4 C diced small tomatoes
2+/- jalepeno peppers, peeled, seeded, chopped small
1 onion, chopped small
1-3 cloves garlic, pressed, to your liking.
cilantro, chopped.

Add all together in a glass or plastic bowl. Mix with a little salt to your liking.
Refrigerate for 24 hours. Adjust seasoning if needed. Enjoy!

if you want to add some "heat" to the mixture, instead of hot peppers, I use a hot pepper sauce.  add 3-4 drops at a time, stir, then sample.  add 3-4 drops as needed for desired flavor.

I put Mango in my salsa for an explosion of flavor in your mouth 8)

Never have attempted to make salsa but I do LOVE it. To me there is nothing better in the morning than scrambled eggs with salsa dumped all over them!!
