I've always found thrift stores to be a good source of cutlery for camping.  I suggest you make some cardboard scabbards if they're laying loose in a drawer.  It'll protect both the blades and your fingers.

Hey Vern,
I just skimmed 5 crockpot books for breakfast ideas and struck out.
Eggs are not a good candidate for the long cooking process.  They'd become very rubbery.
Now if you'd like some recipes that would work well for breakfast food, and Hispanic comes to mind, I can point you to a lot of pork recipes that'd kick serious tush in a tortilla.

Off the top of my head I can think of pork shoulder cubes in green enchilada sauce with diced onion.  When it has cooked, crumbled queso fresco rolled in a warm tortilla.
Another, Asian style would have hoisin, black bean and garlic sauce and the pork shoulder cubes.
Chicken?  Sure, how 'bout chicken thighs, diced green peppers, diced onion and a little chili oil or sriracha.  Cool, shred the meat and get the veggies and put on your tortilla.
How do they sound?
