Hi Steve, We have been trying the low carb approach and it appears to be working for us..  However, we are running out of ideas.  Could you recommend a specific low carb cook book for us please...Did the Google thing but could not tell the sheep from the goats :-  Any assistance in this matter is highly appreciated...We are going for a life style change...Thanks Buddy, Vern

Good news, Vern.  I'll be talking to some folks tomorrow who are really into the carbs and starch watching stuff.  I'll get you some info.

I do know when it comes to the carbs/starches, it's the sugars that are the issue.  Carbs without sugars are what they seek.

I know.  Years ago I was the dietary director of a retirement community.  That one kept me on my toes.

I've become a temporary diabetic (prednisone), and watch my carbs...rule of thumb, avoid white flour products - breads, pasta, rice, starchy veggies (ie., corn, limas).

I found a 'Fix It & Forget It' cookbook with lots of crockpot/slow cooker recipes in it that are 'real food'.......and have been adapting them to stovetop, oven, pressure cooker, etc.

Being a type 2 diabetic I have found that carbs in breads or pastas are ok in moderation as long as they are consumed with some protein and salad. Its all about how your body breaks things down. The balanced diet slows down the sugar absorbtion so your body has a chance. My biggest culprit that wore down my pancreas was 30+ years of sugar soda pop, primarily Mt. Dew. Of course everybody is different so this is just my 2 cents.
