Camping SOS is great, and an easy way to do it is use engligh muffins. You can toast/brown them right on your griddle, it doesn't matter if they get a bit over cooked or dark as the SOS will soften them right up. Of course we don't use the premade packaged stuff, but do get the dried beef and make our own sauce.
You can also make SOS interesting by changing what its put over. Once of the best ones was we pan fried perogies and put the SOS over that.
Pete has also made a log of Frittata's. (Basically Egg Pie), they can have anything from vegtables, to meat, to cheeses. Any frittata recipe will work, just skip the oven browning top step.

I was just going to suggest that. We do it all the time, in fact for longer trips we make a double batch for 2 days worth of breakfasts. If anything, it thickens up in the cooler and sometimes need to be watered down when heating up. We have also pre cooked homefires then just heat them up when rready. We also bake the bisquits at home and just put them in a large zip lock. VERY easy yummy breakfast!
Bob Evans also has 2 or 3 different skillet breakfasts with hasbrowns, green peppers, onions, bacan or sausage that you add eggs to which is also very good.
Quiche (just egg pie without crust)
6 eggs scrambled
12 oz evaporated milk
Stir into eggs, pour into greased pie dish.
1 C crumbled/cubed meat, precooked and cooled a little
1 C veggie of choice, precooked and cooled a little
1 C shredded cheese
Place above 3 evenly throughout eggs already in pie dish.
Bake in greased pie dish (one with taller sides) at 375F for 30 minutes. (or until knife placed in middle comes out clean)
Let stand 5 minutes.
Cut and serve.
I normally use frozen (thawed first) or canned veggies (drained and chopped if needed).

cook up some venison sausage, crumbled into some sausage gravy (get Southern Mills mix at the grocery store, it's quicker), scrambled eggs on the biscuits or on the side, ladle the gravy over all of it, fresh coffee . . . . . .

Breakfast Tacos Recipe
Ingredients:
1 dozen eggs
1 lb Jimmy Dean sausage
Package of flour tottillas
Equipment:
Large frying pan
Spatula
serving spoon
something to scramble eggs in
Instructions:
Cook sausage in frying pan, breaking into hamburger size pieces. Drain off excess fat, leave sausage in pan. Crack eggs into bowl and beat. Add
eggs to sausage in pan, and cook, stirring often. When done, spoon onto tortilla shells and enjoy. This is enough for 6 boys to have two each.

When I camped with the scouts, this was a favorite on campouts. At least one parent on each campout fixed them for breakfast. Minimum equipment and almost no cleanup.
We (and by We, I mean me) do breakfast burritos. Dice up some "taters", onions and a little bell or jalapeno pepper any brown it. Now you can either cook some type of meat like bacon, sausage or ham etc... or do as I do. I dice and save and freeze any meat we have left over at home (Italian sausage, steak, roast pork, brisket, etc...) then you throw in what you need along with some eggs and scramble it all together and put it on a tortilla with some cheese and salsa or hot sauce (my favorite) and enjoy. It's also a good way to use up any left overs while on your trip. We hate to waste anything, so we do this a lot. We also wrap them in paper towels to eat the, so there are less dishes to do.
Another way is to do the above ahead of time at home and then wrap the burritos in foil and either heat them up on the griddle or on the grill.
We also tend to have the "same ole breakfast", but it's because it's one we like.
Fry up bacon or sausage; remove and hold.
Fry shredded potatoes in grease, season with salt, pepper, and in our case, chipotle seasoning.
Add eggs. We use cartoned eggs such as EZ Egg. Return bacon or sausage and allow all to cook together.
Basically it's little more than a hash brown casserole.
