We just tried a few of the Swanson flavored soup broths and they were very good. We tried the Mexican Tortilla Soup and Chinese Hot and Sour. There is also a Thai Chicken Soup and maybe another. They come in 32 oz. boxes that make, of course, 4 cups. All you need to do is get the other ingredients listed on the recipe on the box and you've got "gourmet" soup.
For the Tortilla Soup, instead of using the separate can of diced tomatoes and chopped jalapenos, I used a 7 oz. can of Herdez red salsa (found at Walmart); but you could also use a 10 oz. can of Ro-Tel diced tomatoes with green chilies. A can of (Costco) chicken breast with water was used as the shredded chicken along with one can each of black beans and drained corn.
The Hot and Sour soup was made with a mixed selection of mushrooms from Publix. I had to julienne the bamboo shoots by hand but it wasn't that bad. It seemed like a lot of tofu at the time, but that went well. I did not include the slivered pork because I did not have it on hand and the soup tasted great without it since the tofu gave it "substance."
These seem to be pretty easy soups for camping if you like different kinds of soup. Other than the tofu, everything else comes out of cans.
