Had to fold up the pop up wet Yesterday  (first time I had to do this) with the weather today (high winds and a possibility of rain) and upcoming forecast looks like I won't be able to dry it out until Tue or Thurs will mold form in this amount of time.

do you have a garage? if so, just open it up a little bit, and run a fan right over it. i have done this, and saved my butt a  number of times

I feel for you Wilssm.  I picked my camper up from storage yesterday and drove home in a driving rain storm.  I had to put my pup up today to get some camping gear out of it for a backcountry fishing trip this Wednesday.  I put the camper up and pulled the beds out but did not pop them up.  It was so windy that the beds looked all set up from the wind blowing and that was with the windows all unzipped.  I quicly grabbed what I needed and put it back down.

Sadly, I have camped many a time where it had to be put away wet. I would always panic if I couldn't set it up immediately, in reality I have learned a few days isn't going to hurt. Since in most cases when its very raininy that you can't set it up, its not that sunny, so the conditions to grow the mold and mildew haven't started up.

I have had to wait as long as 7 days in a few cases, and with good airing out, it was just fine. If I had to wait a long time, I just left it up longers. I don't belive a few days is going to make a huge but of difference.

I was able to get it set up this morning hoping the rain holds off til this evening so it can air out also set up the dehumidifier on the inside to suck out the moisture. Surprisingly the inside was dry the only thing that was wet was the tenting material.

Exactly, so even in the worse scenario,  you could just put it back up while its raining and just leave it up until a day or so after it stops.

I lucked out this weekend.  I didn't think the popup would dry out after that rain storm on Saturday but the sun was shinning on Sunday and everything dried out by noon when I started to pack up.

I have heard someone suggest previously that even if it is supposed to be rainy in the days following your return to go ahead and set it up in your driveway (if neighbors and HOA permit) This way then it clears up on say Wednesday afternoon that it can potentially be dried out by the time you get home.....I have never had to do this but I can understand the logic.

I totally agree with CampingPhil - if you can't put it up long enough to dry it out, try to put it up long enough to let the rain wash it off...
