We are thinking that a nice hearty beef stew would be our offering this trip.

Sticking with the Mexican theme I think I will make some Cheese Quesadillas.
Currently I'm replacing the floor in my TT under the bed. I have to hurry up and finish that before next weekend. It is going fast....unfortunately it is the 3rd time I'm doing this type of project. I seem to do 1 corner of the trailer every year. 2 years ago it was the bathroom rear corner, then it was the rear bed corner under all of the water stuff. This one is easy under the front bed....it's just a storage area under there. No plumbing or electrical stuff I need to mess with.
