We are looking to buy 2 new bikes for this camping season and have no clue what's good and what's junk.  We are looking at spending about $600 each.  Any with experience have suggestions?

Born2camp. You have a budget that could easily get you some decent bikes. A couple of seasons ago, I bought two slightly used Trek Mountain Bikes, for the wife and I ,through craigslist. Paid only $200.00 each. Hers is a Trek 3900 with aluminum frame, it was barely used and still had little rubber nubs on the tires that normally wear off after a few rides. Mine is a Trek 4300, Also aluminum frame. It was in need of a little cleaning but had several upgrades done to it. It has disc breaks, upgraded front shocks, custom seat and hand grips, etc. I would say to go to a bike shop  or talk to someone familiar with bikes just to figure out what size of frame you should be looking for to fit you well. Before you pull the trigger on purchasing a new one check craigslist regularly for a while. There should be many barely used bikes up for sale as spring aproaches. I started looking for ours in February and missed out on a couple that I thought were decent but kept looking daily and found ours in March from 2 different sellers. I drove roughly 90 miles one way to get them but they were surely worth the money. They are light weight so loading in the truck is easy and they ride and shift like a dream.
