Probably a Southern thang...but anyone have any favorite recipes...thnks, vern :chef:

There was (once upon a time anyway) a hotel/motel in downtown Charleston whose breakfast speciality was shrimp & grits. To say it was delicious is an understatement - never have tasted anything close to it since those days.

I used to work at 82 Queen.... one of the finer restaurants in the Lowcountry and I know the chef used heavy cream in the grits(some chefs use chix broth)....I don't know the exact recipe for the shrimp and grits recipe at 82 Queen but I do know they served it with a drizzle of BBQ sauce and some shredded cheddar cheese and shredded bacon pieces on top.....yummy! I serve mine the same way to this day and we have it for dinner with cornbread!

The second recipe I show uses 3 cups milk.  You could back that down to about 1-1.5 cups cream and add a little more stock.

Wolfie,

I would be glad to share my recipe.....let me think on it and try to find the real one from 82 Queen ( used to have a recipe packet of the more popular recipes of theirs.....)....either way, I'll get back to you with something.....SCmomma

Ok, I am back and found it alot quicker than I thought ( whew, I thought I might have to go searching in the attic but the internet and the information age saved me! :))

Anyway, here is a link to the 82 Queen Shrimp and Grits recipe from their site and if you are interested, they also have a recipe for the BBQ sauce they use.....personally I just use regular quick grits and add some shredded cheddar cheese and a drizzle or two of BBQ sauce ( just regular old BBQ sauce from the groc store) and some crumbled bacon to the grits once they are cooked.....Oh and I do add about a stick ( gasp!) of butter to my pot of grits.....that part is optional but it makes them extra tasty! ( or so I will tell myself on the way to the ER eh?)....haha.....I do admit however that 82 Queen's grits are extra creamy due to the cream they add......

MAKES 6 DINNER PORTIONS

LOWCOUNTRY GRITS INGREDIENTS:
2 cups of heavy cream
2 cups of water
1/4 lb. butter
1 tsp. salt
1/2 tsp. white pepper
1 cup of quick grits

PREPARATION:
Bring cream and water to a boil. Add butter, salt and pepper. Slowly add grits and reduce heat. Cook 20 minutes, being careful not to scorch mixture.
