I'm thinking about trying out the dutch oven this weekend so I'm less likely to screw it up at the Spring Opener.
Can I just put the coals on my home grill rack with the dutch oven on top and leave the grill lid open?

You really need something flat for the legs to rest on. A baking pan or cookie sheet will do.  Also I recommend using a dutch oven liner (available at places like WalMart) they make clean up much easier.

I have done that before, but like mentioned, it can be tricky getting the DO to sit on the grill grate. If you can then I would go for it. If it's a gas grill line the grate with foil so when the charcoal burns up the ashes won't fall down into the burners.

This is what I made. Old plow disk and scrap 1/2 inch steel rod. Welded bolts to rod and welded nuts to bottom of disk. This made the legs removable for storage. Later I welded a horse shoe to the side to hold cooking utensils.

I've been cooking in a Dutch oven for a little more than a year. Great meals have come out of then. My favorite is lasagna.

I use the pan from a cheap Wal Mart BBQ.  Normally meant to throw out after one or two uses.  I use it without the legs, just put it on the ground, put coals in it, sit the DO on top and then coals on top.

I'm not sure I know what I'm doing but that was some damn good lasagna.

sprayed the oven
[smg id=2054]
add 27 bricks
[smg id=2055]
a little newspaper to start them
[smg id=2056]
browned the ground beef and sausage
[smg id=2058]
layered my lasagna with sauce, meat, cheese and noodles
[smg id=2059]
put the dutch oven on the grill
[smg id=2060]
added hot charcoal bricks under and over the oven. (8 bottom - 16 top)
[smg id=2061]
removed dutch oven after about 40 min.
[smg id=2062]
dinner is served
[smg id=2063]

How long do the bricks last?  Do I need to add more sometimes?

Yes sometimes you will. Wind, outside temperature, and brand of charcoal will all factor in if you will need to add more. I usually just fill the chimney and go from there!!

I try to block the wind as much as possible as it is your worst enemy. I think I have only had to fire up another batch of coals three or four times in my 4 or 5 years of DO cooking.

The lasagna looked awesome..........any leftovers, there always better the next day!!!
